Perfect for summer days, strawberries and watermelon combine in our salad to hydrate you and boost your levels of vitamins and minerals. Our recipe adds a touch of the east with rosewater and pistachios.
- Make the syrup by adding the caster sugar to 125 millilitres of water in a small pan, with the ginger and vanilla pod split in half. Simmer over low heat, constantly stirring until the sugar is fully dissolved. Continue simmering the mixture until it takes on a light syrupy texture. Once it’s cool, stir in the rosewater.
- Put the watermelon slices on a plate, add the strawberry rounds, and drizzle the syrup over. Add the pistachios and serve with a bowl of creamy natural yoghurt.
